Ingredients (makes two servings)
- large or medium shrimp, 1lb / 500gr
unpeeled Bamboo skewers
- Olive oil 1/2 cup
- green chilies, minced 2 pcs
(you might use less if they’re very hot)
- Clove garlic, minced 1 pcs
- Red onion, minced 1/2 pcs
- Ccoriander leaves, chopped 1/2 cup
- Juice 1 or 2 limes
- Black Pepper / Salt To Taste

How To Make It
Get your O-Grill warming up while you prepare this dish, it’s so simple and quick that you’ll be amazed. First you should soak the shrimp in iced water for about 10 minutes, drain them and pat them dry. While they are chilling, chop the ingredients for the sauce.
Brush the shrimp with olive oil and put them on the grill to cook while you mix the sauce – it only takes a few minutes to do this if you’ve chopped the ingredients beforehand.
While the shrimp are cooking combine the chillies, garlic, olive oil, onion and coriander in a small bowl. This will make the sauce. Add a little salt and pepper to taste – careful with the chilli, if they are hot ones you might not need them all! Serve the shrimp with the sauce on the side and your guests can then spoon it onto their shrimp or use it as a dip.
The lime juice gives a lovely acid tang to complement the flavours and aroma of the shrimp that are sizzling on your O-Grill!

Step 1 - Chilling the Shrimp
Begin by soaking the shrimp in iced water for ten minutes, while they are soaking you can go on to step 2...
Step 2 - Preparing the Sauce
Finely chop the chillies, garlic and red onion and chop up the coriander. Put a little bit of chopped coriander on one side to use as a garnish when you serve the shrimp. Put the rest of the ingredients in a small bowl. If you’re not sure how hot the chillies are just put half of them in - you can add more later as you mix the sauce.
Step 3 - Grill the Shrimp and Mix the Sauce!
Preheat your O-Grill to a medium heat and brush a little olive oil over shrimp. Thread the shrimp onto bamboo skewers (four per skewer is fine). Place the shrimp on the grill and listen to them sizzle, but not for long… You have to make the sauce! Mixing the sauce while the shrimp are grilling makes this dish super fast.
Add the lime juice and olive oil to the bowl of chopped ingredients and mix it up thoroughly with a spoon. Add a little salt and pepper to taste. If it’s not as hot as you would like, add the remaining chillies to get it how you like it. By the time the sauce is mixed the shrimp should be perfectly done.
Step 4 - Serve and Share!
When the shrimp are a golden brown on the outside, remove them from your O-Grill and transfer them to a serving plate. Place the bowl of sauce on the plate with a small serving spoon and use a little to baste the freshly grilled shrimp. Your guests can then add as much or as little more as they desire.
For decoration sprinkle the chopped coriander you put on one side onto your freshly grilled shrimp. A simple and very tasty dish that will get your guests talking about your culinary skills!
