Ingredients
( makes two servings )
- Bread Finely Chopped
and Broken Into Breadcrumbs 2 Slices(see steps below)
- Finely Chopped / Crushed Nuts 4 Oz
(basil, hazelnuts, cashews or peanuts but not almonds)
- Brown Onion, Finely Chopped 1
- Large Clove of Garlic, Finely Chopped 1
- Egg, Lightly Beaten 1
- Dash of Soy Sauce To Taste
- Curry Powder 1/4 Teaspoon
(optional) Grated Cheese for Topping
- Chopped Herbs:
Coriander, Parsley & Basil or Others to Taste 1/2 Teaspoon - Salt & Pepper to Taste To Taste

How To Make It
You can use any combination of nuts in the filling. Brazils, hazelnuts, cashews and peanuts are all good for this dish but avoid almonds as they are too hard to mill easily. Add a little curry powder if you prefer a more spicy flavor.
This is a perfect camping and picnic recipe – simply prepare the ingredients and pack them in ziplock bags or food containers and you can set up your O-Grill and enjoy them almost anywhere!
Directions
Step 1 - Mill The Bread & Nuts
Finely chop or crush the bread and nuts together to the consistency of fine breadcrumbs. It’s easier to chop them together than separately. You could use a pestle and mortar if you have one to do this.
Step 2 - Stir Fry Onions & Garlic
Stir fry the onions until they go clear then add the garlic and continue to fry for another minute. Remove from heat and allow to cool briefly.
Step 3 - Scoop Out the Peppers
Remove the tops of the peppers and put them to one side. Scoop outside the insides.
Step 4 - Fill the Peppers
Add all the other ingredients and mix them together in the pan. You can use any fresh herbs to your liking to customize the flavor. Fill the peppers with the mixture and add grated cheese on top.
Step 5 - Grill Them on Your O-Grill!
Brush your peppers and lids with a little olive oil and cook upright on your O-Grill on a low setting until the cheese starts to melt on top and the peppers are cooked through and starting to brown on the bottom. Grill the tops separately on the grill at the same time. You can brown the cheese on top with a gas torch as an option once the peppers are cooked.
Step 6 - Serve up a Feast!!
Place the tops back on the peppers and serve to your delighted guests!
