- 4 large chicken breasts or 8 chicken thighs

- Cup tomato ketchup 1/2
- Cup soy sauce 1/2
- Cup brown sugar or honey 1/2
- Cup freshly squeezed lime juice or vinegar 1/4
- Fresh ginger, peeled and finely chopped 1 pcs

- Small pineapple cut into slices or you can use tinned pineapple rings 1

How To Make It
A Honolulu businessman served a teriyaki style chicken dish to his dinner guests one night in 1955 and was so impressed by their response that he started marketing it. The result was Huli Huli chicken.
The original recipe is a trade secret, but we’re sure your guests will be just as impressed by your version! Because this is a sweet and sour dish you can experiment with the flavors – use honey instead of brown sugar if you like, or you could use vinegar instead of lime juice if you prefer less citrus flavor.
Traditionally this dish is accompanied by grilling some pineapple rings on the grill, which adds to the Hawaiian theme. It goes well with plain rice or a side salad to balance the strong flavors of ginger, garlic, soy sauce and lime juice, but could also be served with steamed vegetables.
Preparing Sticky Hawaiian Huli Huli Chicken
Step 1 - Prepare the Marinade
Put the chicken to one side, combine the ingredients and mix together in a bowl big enough to add the chicken when you’re done. Put a couple of tablespoons of the mixture in a cup and keep it for basting the chicken when you are grilling it on your O-Grill.
Step 2 - Marinade the Chicken
Put the chicken in the bowl of marinade mixture and rub in the mixture, ensuring the chicken is well covered. Put a plate or cling wrap on top of the bowl and put it in the refrigerator. Leave to marinade for at least 5 hours. 8 hours will probably give the best results. If you like you can turn the chicken in the marinade every hour or two to help the flavours develop.
Step 3 - Grill Your Huli Huli Chicken on Your O-Grill!
You will need to set your O-Grill to a medium heat - you need to cook the chicken through thoroughly but don’t want it to get too tough. You can cook some pineapple on the grill alongside the chicken to add a colourful sticky garnish to your dish!Grill the chicken for approximately 30 minutes, turning it frequently so that it doesn’t burn. Keep adding the marinade you kept back to baste the chicken and keep it juicy. Test a piece by cutting into it when you think it’s done - you’ll know it’s ready when the juices from the chicken are clear and none of the meat is pink.
